Blue Crab Stuffing

 

A rich, spicy stuffing chock-full of tender, sweet crab meat - impressive when served in a natural shell.

 

Remove remaining shell and cartilage from crab meat. Cook bacon until crisp; crumble and set aside. Saute vegetables in bacon grease. In large mixing bowl, combine cracker crumbs and dry ingredients. Add all other ingredients and mix thoroughly. Stuff mixture into shells or casserole dish and bake at 350 degrees for 30 minutes. Makes enough for 6 crab shells.

1 pound flaked blue crab
2 slices bacon
½ cup chopped onion
½ cup chopped celery
¼ cup chopped bell
1 clove minced garlic
2 cups crushed cracker crumbs
1 teaspoon dry mustard
1 teaspoon salt
2 tablespoons chopped parsley
Dash cayenne pepper
1 beaten egg
¼ cup milk
½ cup melted margarine
1 teaspoon Worcestershire sauce
